Tomato Recipes

Classic Tomato Bruschetta

Ingredients:

  • 6 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 20 fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted

Mix together the tomatoes, minced garlic, olive oil, balsamic vinegar, and chopped basil. Season with salt and pepper. Spoon the mixture onto the toasted baguette slices, and serve immediately.

Garden Fresh Tomato Soup

Ingredients:

  • 10 ripe tomatoes, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Sauté the onion and garlic until tender. Add the diced tomatoes and vegetable broth, then simmer for 30 minutes. Blend until smooth and return to the heat. Stir in the cream and season with salt and pepper. Garnish with fresh basil leaves before serving.

Tomato and Mozzarella Salad (Caprese)

Ingredients:

  • 4 ripe tomatoes, sliced
  • 1 pound fresh mozzarella cheese, sliced
  • 1/3 cup fresh basil leaves
  • Salt and pepper to taste
  • 1/4 cup extra-virgin olive oil
  • Balsamic glaze for drizzling

Arrange slices of tomatoes and mozzarella on a platter. Tuck whole basil leaves in between the slices. Drizzle with olive oil, season with salt and pepper, and finish with a drizzle of balsamic glaze.

Fresh Tomato Salsa (Pico de Gallo)

Ingredients:

  • 5 ripe tomatoes, diced
  • 1 red onion, finely chopped
  • 1 jalapeno, seeds removed and finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Combine all ingredients in a bowl. Stir well and let the flavors meld for at least an hour before serving with your favourite tortilla chips.

Tomato and Basil Pasta

Ingredients:

  • 4 ripe tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 cup fresh basil leaves, torn
  • Salt and pepper to taste
  • 1 pound pasta, cooked

Sauté the garlic in olive oil until fragrant. Add the chopped tomatoes, balsamic vinegar, and torn basil leaves. Simmer until the tomatoes have softened. Season with salt and pepper. Toss the sauce with cooked pasta and serve with a sprinkle of parmesan.
