Ingredients

  • 3 cups waxy potatoes
  • 5 slices bacon, diced
  • 1 large onion, finely chopped
  • 1/3 cup white vinegar
  • 1 tablespoon sugar
  • 1/4 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped for garnish

  2. While the potatoes are cooking, fry the bacon in a large skillet over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  3. Add the chopped onion to the skillet and cook in the bacon fat until translucent and slightly browned.
  4. In the same skillet, add the vinegar, sugar, water, salt, and pepper. Stir well and bring to a boil.
  5. Once boiling, add the sliced potatoes and cooked bacon to the skillet. Reduce the heat to low and stir gently until the potatoes are coated with the dressing.
  6. Cover and simmer for about 5 minutes, until the potatoes have absorbed some of the dressing.
  7. Transfer the potato salad to a serving dish and garnish with chopped fresh parsley.
