Lemony Green Bean Salad with Feta

Ingredients:

  • 1 pound fresh green beans, ends trimmed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint leaves
  • 2 tablespoons olive oil
  • Zest and juice of 1 lemon
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for 2-3 minutes until bright green and just tender. Drain and immediately plunge into an ice water bath to stop cooking.
  2. Make the Dressing: In a small bowl, whisk together the olive oil, lemon zest, and lemon juice. Season with salt and pepper to taste.
  3. Assemble the Salad: In a large bowl, combine the blanched green beans, feta cheese, red onion, and fresh mint. Drizzle with the lemon dressing and toss to combine. Adjust seasoning if necessary.
  4. Serve: This salad can be served immediately, but for best flavor, let it chill in the refrigerator for an hour before serving. Enjoy it as a side dish or a light main course on a hot summer day.
