For the Peach Filling:

Instructions
- Prepare the Peach Filling: In a large bowl, combine the peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat the peaches evenly and pour them into a 2-quart baking dish. Bake in a preheated oven at 425 degrees Fahrenheit (220 degrees Celsius) for 10 minutes.
- Prepare the Cobbler Topping: Meanwhile, in a large bowl, combine flour, 1/2 cup white sugar, 1/2 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips or a pastry cutter until mixture resembles coarse meal. Pour in boiling water and stir until just combined.
- Assemble the Cobbler: After removing peaches from the oven, drop spoonfuls of the topping over the peaches.
- Bake: Sprinkle the cinnamon-sugar mixture evenly over the cobbler topping. Bake in the oven at 425 degrees Fahrenheit (220 degrees Celsius) for about 30 minutes, or until the topping bubbling and golden brown.
- Cool & Serve: Serve your peach cobbler warm or at room temperature. It pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream!
